Name of Recipe:  Lentil Soup

Ingredients:
1 - one lb. bag of Red lentils

1 - Large Onion
4-6 Large Cloves of Garlic
12 Cups of broth or equivalent water + soup mix (I like Osem brand Consomme)
3 Tbsp. Lemon Juice or Red Wine Vinegar (to taste)

Spices:
3 tsp. Curry; most curry spice you will find will be a mixture of Cumin, tumeric, clover and other spices such as red pepper which will determine how spicy it is, so add extra spices to taste preference.
2tsp. Cumin
Salt, do not add salt if you use Consomme or it will be too salty for most
Pepper
Tumeric
Clove and/or Cinnamon (to taste)
3 pinches Thyme

Directions:
Saute onions and garlic in olive oil or vegetable oil, until caramelized.  Add bag of red lentils and spices and let them saute for approx. 3 min.
Add water, bring to a boil, stir every 5 min.

Let simmer for 45 min.  Use immersion blender for 2 seconds. (or remove half the soup and blend the other half).  Add lemon juice and Thyme and simmer for another 10 minutes.
