Recipe Type: Parve Dairy Meat Pesach
Name of Recipe: Potato Latkes and Applesauce ala Molly Goldberg
Ingredients:
3 large potatoes, peeled and grated (for an interesting touch, use sweet potato and white potato also you can shred instead of blend).
1/4 teaspoon salt, more to taste
Black pepper to taste
1 onion grated
1 heaping tablespoon of flour or matzo meal
2 eggs, beaten
1 teaspoon baking powder
vegetable oil for frying
Directions:
Grate potatoes and drain liquid. Grate the onion (this can be done in a food processor).
Add salt, pepper, flour or matza meal, baking powder, and eggs, mix well.
Heat 1/2 inch of oil in large frying pan. Drop 1 heaping tablespoon of batter into hot oil.
Fry until golden on both sides. Drain well.
Latkes can be kept warm in the oven.
Note:
Can be made gluten free by using rice flour instead of wheat. Serve with Applesauce or sour cream.
Applesauce
Ingredients:
4 apples, cored and peeled
1/2 cup water
1/2 teaspoon cinnamon, if you want, sugar to taste.
Peel apples and cut into pieces. Place into pot with water and bring to boil.
Turn heat down, cover and allow to simmer approx. 15 minutes.
You can add cinnamon, sugar, cloves, or any spice you like. You can also spice it up with dried cherries or dried cranberries.
If you like it chunky, just cook less.
If using a pressure cooker, bring up to steam and allow to cool naturally.
Note:
Applesauce is parve, gluten free, and no sugar added if you use sugar substitute.
