Name of Recipe:  Itty's 'Cream of Any Vegetable Soup'

Ingredients:
Oil (to sauté)
1 Large Onion
2 lb. Vegetables (broccoli, carrots, butternut squash, etc.)
1.5 qt. Vegetable stock or bullion

Directions: 
Bring vegetable stock to a boil.

Sauté onion 3-5 minutes.
Add the vegetables and continue to sauté' additional 3-5 minutes
Stir hot vegetable stock into it, cover, and simmer for 30 minutes.

Use an immersion blender and process.
Season with salt & pepper.
