Alic Medrich's "Pure Dessert"
or Olive Oil Pound Cake

Ingredients:
3 Cups all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1 Cup flavorful extra virgin olive oil (can substitute veggie oil)
2 Cups sugar
2 tsp. grated orange zest (you can use lemon or a combo of  
         both)
5 large, cold eggs
1 Cup rum or pineapple juice
2 Tbls. vanilla

Directions: 
Position a rack in the lower third of the oven and preheat to 350 degrees. 
Grease and flour tube pan or 2 loaf pans (can use spray and prepared parchment paper).
Mix flour, baking powder and salt.  Sift into bowl and set aside.
In the bowl of a stand mixer with whisk attachment, beat sugar and oil and zest on high speed.  Add eggs-one at a time and continue beating 3-5 minutes.  Mix should be light yellow and thick.
Add half of the rum/pineapple juice, half the flour - mix - then rum/pineapple juice and flour.
Scrape into prepared pans and bake for 50-60 minutes or until toothpick comes out clean.

Allow to rest in the pans for 30 minutes. Remove from pan.

Can be enjoyed with berries, fruit or non-dairy toppings.
