Name of Recipe:
Mediteranean Salad

Ingredients:
2 Cans niblets corn, plain or mexicalli
1 Can black olives, pitted whole or sliced
1 Can hearts of palm, sliced
Dressing:
6 Tbls. olive oil
2 Tbls. lemon juice
1 tsp. Mustard
Salt and Pepper to taste

Note:  Add herbs like basil & cilantro or pepper flakes if you want some zip:)

Directions: 
Mix the first three ingredients together in serving bowl.
In different bowl, blend together the dressing ingredients.
Pour over the corn mixture.  Enjoy!
